Spicy Tomato Soup with Homemade Bread
Sometimes only soup will do!!
This tasty soup is lightly spiced and the coconut milk makes it creamy and filling.
The bread is simple to make and packed full of seeds.
Double the ingredients for the soup and pop some in the freezer for another day.

For the soup:
1 tbsp coconut oil
75g white onion- chopped
20g fresh root ginger – chopped
1 garlic clove – chopped
½ red chilli – chopped
1 lemongrass stalk – chopped
1 tsp coriander seeds
300g tomatoes – chopped
400mls coconut milk
1 tsp lemon juice
Heat the coconut oil in a large pan. Add the onion, ginger and garlic and sauté gently for 5 minutes. Add the chilli, lemongrass and coriander seeds and sauté for a further 5 minutes. Add the chopped tomatoes and sauté for a further 5 minutes.
Stir in the coconut milk, bring to the boil, then simmer for 30 minutes. Season with lemon juice and a pinch of salt and pepper.
Transfer to a blender and blend until smooth. Pass through a fine sieve if you would like it smoother.
I more often than not I roast whole tomatoes in the oven and then added them to the blender.. gives the soup an extra depth of favour. You can use tinned tomatoes if you are short of time or large salad tomatoes (skinned and deseeded). The choice is yours.
For the bread:
Spelt Bread adapted from Honestly Healthy by Natasha Corrett and Vicki Edgson
Ingredients to make a 1lb loaf
225g Flour (Mix white spelt, wholemeal spelt and rye)
1 tbsp of baking powder
¼ tsp salt
1 tbsp olive oil
225ml water
Honey to top loaf
Mixed seeds
Pre-heat the oven to 190C.
Mix the dry ingredients in large bowl. Then, stir the olive oil into the water and stir this mix into the dry ingredients.
The mix will resemble a thick batter and depending on the mix of flours you use have a grey-ish appearance.
Grease a small loaf tin and add mix.
Bake for 50-55 minutes. Half way through cooking brush with honey (Or molasses if you want to make this vegan). This will give the loaf its colour!!!
I add mixed seeds (the omega 3 mix from the grape tree) to the dry ingredients and then to the top when I add the honey. I don’t measure but it will be about a 2/3 of a cup.
