Ketogenic Brownies

Continuing with my mission to support people to have their cake and eat it regardless of the diet plans they wish to follow I have been trying out LCHF and ketogenic recipes.

I have managed to work a brownie recipe that, although more cake-y than brownie, seems to deliver on taste. Not a looker but the taste is there.

Ingredients

1 medium sized avocado

1/2 cup of erythritol

2 eggs

3/4 cup of ground almonds

1/2 cup cacao powder

1 teaspoon baking powder

pinch of salt

peanut or nut butter of choice

Method

Preheat the oven to 180oC

Line a baking tray - approx. 8 inch x 8 inches

Add all ingredients, expect the peanut butter, to a blender and blend until combined

Spoon mixture into the tin and smooth out

Add dollops of peanut butter to the mix to make portions

Bake for approximately 25 minutes or until a knife comes out of the mix clean

Leave to cool for about 20 minutes until the mix has set

Cut into 12 pieces and enjoy
