Homemade Granola

As promised the recipe for my homemade granola.

You can always find a jar of this in my kitchen!!

It makes a lovely start to the day with either Greek Yoghurt and fruit or added to porridge of a bit of crunch.

You can get creative with what you add. Pick your favourite nuts and seeds. Add a little dried fruit at the end if you like and if you are feeling decadent a little bit of dark chocolate goes a long way.

50g almond or peanut butter (smooth or crunchy-whatever you have in)

50g coconut oil

60 ml maple syrup

275g rolled oats

175g almonds or nuts of choice

pinch of Himalayan salt

125g of 70% dark chocolate chopped into chunks (if using)

 

Preheat the oven to 170 c and line two baking trays with baking paper.

Warm the nut butter and oil in a pan until they melt together. Remove from heat and allow to cool for a couple of minutes.

Add the maple syrup to the pan and mix.

Mix all the dry ingredients together apart from the chocolate.

Mix wet and dry ingredients together until they are evenly coated.

Spread in a single layer onto your baking sheets and bake for 25-30 minutes, checking every 10 minutes to ensure the mix doesn’t burn.

Once golden-brown remove from the oven and allow to cool.

Once cooled but not cold add the chocolate and mix.

 

This mix will last for up to 3 weeks in an airtight container.

You can play with the mixture – pecans work well as do some other nuts but beware walnuts can go bitter. Mixed seeds can be added to the cooled mix or dried fruits such as goji berries.

My favourite is sour cherries, pecans and mixed seeds.

The one in the picture is mixed nuts and omega 3 mixed seeds.
