Oat and Chia seed biscuits

I am not really sure it these are a biscuit or a cookie or an oat bar come to that!!

One thing I am sure of is that they are VERY tasty.

Have you ever had to make something and then realised that 1: you haven’t done a proper shop and 2: you don’t know the dietary needs of the people who may be eating your food?

That’s how these little biscuits to into being…

They are a combination of things that are in my cupboards and an egg!!

They have a soft texture and are perfect with a cuppa and good company.

Basic mix

2 3/4 cup rolled oats

1 1/2 cup ground almonds

1/4 cup chia seeds

1/4 cup of caster sugar

1 tsp cinnamon

1/2 tsp baking soda

pinch of salt

1/4 cup maple syrup

1/4 cup brown rice syrup (Or 1/4 cup maple syrup)

1 egg

3/4 cup extra virgin olive oil

1/4 cup water

Pre-heat oven to 180oC.

Line 3 trays with baking paper.

Mix the dried ingredients together.

Mix the wet ingredients together.

Combine the wet and dry ingredients together.

Put tablespoon piles of the mix onto the tray. Leave space between them but they don’t spread.

Bake for 13-15 minutes or until golden brown.

Leave on tray to cool.

Makes around 30 biscuits.

For this batch I got creative and to half the mix added 1/4 cup of dark chocolate that I had roughly chopped and 1/4 cup of semi-dried Morello cherries.

Get creative with a little dried fruit … swop caster sugar for coconut sugar .. use gluten free oats … add some seeds.
