Energy Bar

Not the prettiest of pictures but what this little energy bar lacks in looks it makes up for in taste !!⠀⠀

I was thinking about a client that needs to maintain their weight while still training when I started to tinker with this recipe. It is crammed full of nuts and seeds but it does use sugars to bind it together. ⠀⠀

It is the perfect post workout bar if you are in a rush, a pre-workout boost if you are heading to the gym after work or just a yummy flapjack.

Ingredients

2 tablespoons of peanut butter (almond butter would work)
1/2 cup of maple syrup
1/2 cup of honey
1/3 cup of chopped dates

2 tablespoons of butter

pinch of salt
50g sunflower seeds
50g pumpkin seeds
75g of nuts (almond and pecan)
2 cups of rolled oats (I used a cup of jumbo rolled oats and a cup of ordinary in this mix)

Line a 2lb loaf tin with grease proof paper

Set the oven to 180oC

Put the dates, peanut butter, honey and maple syrup into a pan. Bring the mix to the boil and simmer for approximately 5 minutes (until the dates are soft and the mix is reduced)

Mash the dates until they have been incorporated into the mix and then add the butter. Let the butter melt and mix thoroughly

Add the dry ingredients into a bowl and mix

Add the wet mix into the dry and stir until fully combined

Press the mix into the tin. You need to firmly pack the mix in so that it sticks together when baking

Pop into the oven and bake until golden brown and firm at the edges (approximately 40-50 minutes depending on your oven)

Leave to cool in the tin before turning out - this is the important bit ... I know it will be tempting to want to cut a piece but wait until completely cold before turning out and cutting

It should make 16 pieces ⠀
