Almond, Cacao and Coconut Granola
This recipe has been inspired by my love of homemade granola (I always have a jar in my cupboard) and a recipe from Deliciously Ella’s new cook book. Ella’s original recipe is on pages 50-51.
My version has reduced sugar and the addition of almonds.
200g buckwheat groats
100g jumbo steel cut oats
40g desiccated coconut
3 tablespoons of coconut oil
4 tablespoons of cacao powder
4 tablespoons of maple syrup
2 tablespoons of dark brown sugar
200g almonds
pinch sea salt
60g toasted coconut pieces
Preheat the oven to 180C
Line a baking tray with parchment paper
In a small pan heat the oil, cacao, maple syrup and sugar until thick and combined
In a bowl combine the buckwheat groats, oats and the desiccated coconut
Add the oil mix to the oat mix and combine well
Bake for 15 minutes
Add the almonds and bake for approximately 10 minutes … turning so the mix doesn’t catch
Add the toasted coconut pieces and bake for 5 minutes
Take out of the oven and allow to cool completely before storing. It should last a couple of weeks if you can leave it alone that long!
