Blackberry and Apple Chia Pudding Crunch
I was feeling inspired by seeing some lovely, yummy food ideas on my Instagram Feed.
It set me to wondering how I could combine a couple of my favourite ingredients (Chia seeds and Blackberries) with some of these inspirational recipes.
And this is what I got!!
Promise I was so over the moon with the test I started telling my pals before I had even finished eating my first bowel full!
The chia pudding inspiration came from Amelia Freer and her blackberry and lemon chia pudding.
I adapted the recipe to reduce some of the sugar down as I like a tart taste:
400ml tin of coconut milk
150g blackberries
3 tablespoons of maple syrup
7 tablespoons of chia seeds
pinch of salt
I added all the ingredients with the exception of chia seeds into a blender.
I blended until fully combined and then added the chia seeds.
A couple of pulses to mix the chia seeds but keeping them whole.
The mixed got popped into a container and went into the fridge for a few hours.
It should be thick and creamy looking.
I then popped the pudding into three bowls and added slices of eating apples and a couple of tablespoons of my new granola mix.
And there you have it …. Blackberry and Apple Chia Pudding Crunch.
