Broccoli Soup
Broccoli soup is one of my all time favourites.
Depending on the approach I am taking to my diet depends on the base for this soup.
Cream and cheese get added if I am doing LCHF or vegetable stock and fennel seeds if I am not.
Serves 2
1 clove of garlic, finely chopped
125g leeks, sliced
½ tsp fennel seeds
1 tbsp oil (coconut or olive)
500ml boiling water
1 tsp bouillon powder
small head of broccoli, broken into florets
Pinch of sea salt
Sauté leeks in oil in a large pan until begin to soften.
Add garlic and fennel seeds cooking until the fennel releases it scent.
Add the boiling water, bouillon powder and bring to the boil.
Simmer for 3 minutes.
Add the broccoli and cook until tender.
Remove from the heat and blend until smooth.
Add a pinch of salt to taste and serve.
If you want to make in LCHF
Add single cream to cook the vegetables in rather than the water and bullion and the once it is ready to serve add cheddar cheese.
