Oat and Peanut Butter Breakfast Bar
Looking for a simple bake to do with children?
Looking for something different to eat while social isolating that is quick and easy to make?
These little breakfast bars are a perfect way to use up some overripe bananas and simple store cupboard ingredients.
The are a cross between and cake and a flapjack.
The basic mix can be added to with whatever ingredients you have to hand - dried fruit, chocolate chips, desiccated coconut, cherries … let me see how inventive you get :-)
Ingredients
2 ripe bananas
200g rolled oats
1 tablespoon of cinnamon
2 tablespoon of peanut butter
1 tablespoon of maple syrup
100ml milk
2 tablespoons of sultans (or chocolate chips or other dried fruits)
Heat the oven to 180oC
Line a baking tray with grease proof paper
Mash the bananas in a bowl
Add all the other ingredients - with the exception of the mix and mash together until combined
Add the milk, mix thoroughly and leave to stand for 5 minutes
Bake for 12-14 minutes
Leave to cool in the tray
Cut into 9 big pieces or 12 smaller
These can be enjoyed as a breakfast bar or as a snack. Filled with fibre to support your gut microbiome.
